Squash!

I have to say it. I hate zucchini. I know the whole Paleo world is obsessed with it, but I just don't get it. #1, it is super high in salicylic acid and causes me extreme pain when I eat it. Well, that might be my only issue with it. I am jealous that there are so many recipes replacing it for noodles and they make "zoodles" and I cannot even try any of these things. There. I said it.
However, it is fall and pumpkins and weird looking, pretty squash are everywhere.
A few I picked up at the grocery store. 

I just buy them and then figure out what I'm gonna do with them. Squash and pumpkins, gourds or whatever you call them are supposedly high in salicylate. However, I don't feel any effects when I have small amounts, like a small bowl of butternut squash soup, a small piece of paleo pumpkin pie. Now, tomatoes on the other hand and peppers give me a reaction. I don't get the stomach pain, like with eggplant and zucchini, but my neck and face will break out a few hours later. I will also feel very foggy, and low energy the next day, probably from all the inflammation it causes me.
So, I got my cute pumpkin over there in that pic and I decided to make a pumpkin custard from Diane Sanfilippo in Practical Paleo. The difference was I added more egg yolks ( My pumpkin pie recipes always call for more egg yolks on top of eggs so I just decided to to that) and I put it in a pie pan instead of individual ramekins. So, it's like a crustless pumpkin pie. I could've done a paleo crust with nuts and coconut, but I wasn't in the mood. Next time ;)
Not the best pic but it tasted really good. The pumpkin is already sweet, so it really didn't need the maple syrup. It was awesome. Go out and buy Practical Paleo!
